Nutritious and Delicious, Dairy free- Potato Soup

 

Ingredients for the BASE:

5lbs russet potatoes peeled and sliced in quarters

chicken broth

water

salt, pepper, nutmeg, and montreal chicken seasoning

Added Toppings (according to food allergies/sensitivities):

-Bacon bits

-Chives

-Shredded cheese (add when soup is hot so it melts right in!)

-Sour cream

-Corn

STEPS:

  1.  Peel and cut 5lbs russet potatoes.  Rinse them
  2. Bring large pot of water to boiling (don’t forget to add salt to the water before the potatoes)
  3. Once water is boiling, add the potatoes to the water
  4.  Boil til potatoes are soft and you can pierce easily with a fork
  5. Drain off most water until the water just barely covers the potatoes
  6. Smash potatoes to desired consistency (you can leave large chunks or just smash until smooth with no potato chunks)
  7. Add Chicken broth:  add as much as you want to create the desired amount of liquid in your soup (do you want it thicker or thinner?)
  8. Add the nutmeg, montreal chicken seasoning, pepper, and more salt to taste
  9.  Ladle in bowls and have family add the toppings according to their allergies/sensitivities
