Traditional Ground Beef Red Enchiladas
Ingredients
-1 lb lean ground beef
-chopped onion (1/2 cup)
-1 large can of your favorite red enchilada sauce
-salt
-15-20 of your favorite ground corn tortillas
Directions:
Set oven to 350 degrees
Cook the ground beef with the onion and salt
Warm up the enchilada sauce in a pan on the stove top
Warm up the tortillas by dipping them fully into the warm enchilada sauce
Place flat in casserole dish and spoon a heaping spoonfull of meat/onion in the middle of the tortilla
Roll up carefully leaving the edge on the bottom so it doesn’t unravel
Continue until all the tortillas are filled and rolled up, sitting tightly side by side in the casserole dish (no space between them)
Pour remaining enchilada sauce evenly over the top of the rolled enchiladas
Top 1/2 with grated cheese and leave 1/2 with no cheese for the dairy-free people
Bake at 350 degrees for 25-30 minutes
